Chef Wenford Patrick Simpson, corporate executive chef of B.B. King Blues Club and Grill, stopped by CBS2 on Sunday to share some of his favorite island-inspired recipes.

Coconut Curry Strawberry Shrimp
INGREDIENTS
1 pound 16/20 P&D shrimp
1 small onion, peeled and chopped
4 oz fresh strawberry
2 cloves garlic, peeled and minced
Pinch scotch bonnet pepper
1-1/2 cups coconut milk
1 cup water
pinch of seafood seasoning
4 oz dice red bell pepper
4 oz green bell pepper
1 tablespoon curry powder
1 tablespoon oil
salt and pepper to taste
INSTRUCTIONS
Preheat saute pan then add curry to burn for 20 seconds.
Add seasoning and strawberry that you already pre-cut. Saute for one minute.
Add your shrimp and saute two minutes while moving it around. Then add coconut milk let it cook for four to five minutes — be sure to not overcook shrimp.
Best served over Jasmine white rice.
